🍆Moutabel - a more creamy Baba Ganoush🍆
3 small or 2 large eggplants
2-3 Tbsp Olive oil
1 Tbsp smoked paprika
1 large clove of garlic, minced or mashed
1 Tsp salt
1 Tbsp greek yogurt
1 Tbsp Tahini
Grill the eggplants on high heat or put them in the oven for at least 40 minutes, or until they are dark on the outside and very soft to touch.
Spoon out the inside of the eggplants and leave the skin aside.
Cut up the eggplant meat
Add to a bowl and add all other ingredients. Salt to taste
Plate and add some more olive oil on top
