Kimchi Jigae/ kimchi stew🥬🍲



To braze yourself for the upcoming rain in Switzerland (probably in the UK as well😜), what about making a very comforting Korean style stew that warms you from the inside? Good idea right? It's super easy, especially if you have already made some of that kimchi.

Ingredients (serves 2-3)

- 1/4 of a whole cabbage as kimchi (also keep some of that liquid)

- 1 large white onion

- 2 spring onions

- 1 egg (optional)

- bacon (very optional)

- 750mL of chicken broth (or veggie)

- 250g of smoked tofu (pls buy in the asian store)

- 1 Tbsp Gochujang (spicy korean chilli paste)

- 2 Tbsp Sugar

- 1 Tbsp salt


Instructions:

  1. Cut everything to bite size

  2. In a heated pan fry the onions, kimchi and spring onions. Stir for 2 minutes and add the kimchi liquid.

  3. Add the gochujang, salt and sugar.

  4. Cover everything with the broth. More or less if needed. Stir

  5. Let it come to a boil, then cover and let simmer for 10 minutes on medium low.

  6. Take off the lid and add in the egg. Top with the smoked tofu and let it simmer without the lid for 5 more minutes.

  7. Occasionally spoon the sauce onto the tofu

  8. Serve with rice
