Israeli style Whole Roasted Cauliflower



A whole cauliflower, roasted. Let that sink in. First eaten in the streets of Tel Aviv, I'll bring you this #healthy#vegan#roastedcauliflower to the comfort of your home. Super easy to make, only 3 ingredients and very nice oriental flavors.

Ingredients:

- 1 whole cauliflower

- 2 Tbsp of olive oil

- Kosher salt


Sauce:

- 1 bunch fresh parsley

- 1 bunch fresh cilantro

- 1 handful fresh mint leaves

- 2 cloves garlic

- 250 ml orange juice

- Juice of half lemon

- 250 olive oil

- 1 1/2 tsp cumin

- 2 tsp salt


Instructions:

  1. In a pan bring water to a boil and put the cauliflower upside down.

  2. Preheat your oven to at least 230 - 250°C

  3. Simmer for about 8 minutes. The cauliflower should be soft, but not falling apart.

  4. Remove the cauliflower from the water and put it into a roasting dish. Rub it all over with olive oil and slightly salted.

  5. Bake 20 minutes or until roasted and brown.

  6. Blend all the ingredients for the sauce

  7. Salt some more and add olive oil.

  8. Eat with green sauce and optionally with tahini sauce.
